Salmon Dinner: Fast, Fresh, Easy and Yum

Fresh Food that's Faster than a drive in.

This is one my favorite fish recipes- its an adjusted recipe from Real Simple. Only a few ingredients needed, and most you already have. Salmon, maple syrup- 1/2 cup, dijon mustard (2 tablespoons), pineapple (I buy pre-chopped), and rice (3 minute organic Jasmine Rice by Trader Joes). 

  1. Whisk together the maple syrup and mustard in a small saucepan over medium heat and bring to a boil. Simmer until slightly thickened, about 5 minutes. Remove from heat and set aside.
  2. Heat broiler. Place the salmon in a foil-lined baking dish. Season with the salt and pepper.
  3. Scatter the pineapple around the salmon.
  4. Brush the salmon with the syrup mixture and broil for 5 to 7 minutes or until it flakes easily and is the same color throughout.
  5. Serve the salmon and pineapple with the rice and drizzle with the remaining glaze, if desired.
